Shinji by Kanesaka すし道真次, Japanese Restaurant in Singapore, for Superior omakase sushi meal

“I make sushi I personally want to eat it”, the motto of the 1 Michelin Star Japanese Restaurant, Shinji by Kanesaka.

Shinji by Kanesaka
Otoro, the fattiest part of tuna, make into melt-in-mouth nigiri sushi.

Knowing that it’s time to feel “heavenly” through our palate, we have to visit one of these best Japanese sushi restaurants in Singapore, serving only Omakase (meaning to entrust the chef and “I will leave it up to you”) menus.

It was for my birthday, mainly. :)

For birthday celebration. The usual serving consists of just the fresh strawberry and super sweet premium honey dew. :)

Due to Covid situation, the restaurant has set up the counter seats with the see-through partitions.

In this sushi bar setting restaurant, we basically feel the intimacy between diners and the Itamae (sushi chef at the kitchen counter). Such setting allows diners to admire the skilled sushi masters at work making art pieces food to serve to their diners in front of them. Click here to see the artistic performance by the chef:

No specific ingredients spelled out in their menu, it only says what seasonal courses will be be served in our Omakase selection, which comprises appetiser, sashimi, cooked dishes, assorted sushi, soup and Japanese fruits. We knew we are totally good in the hands of the chef of this award wining restaurant, serving only the most superior ingredients. Full course meal prices ranging from S$250 and S$550++ per pax.

Without splurging, there are other lighter selections of sushi sets comprising 12 or 15 pieces served with soup and dessert. Carlton Hotel’s outlet only serves also a 9 pieces lunch option. Sushi meal prices ranging from S$90 to $220++ per pax.

Some of my personal preference. Simply unforgettable.

Let’s see what we had for lunch at the St Regis’ outlet.

It just spells “heaven” with the mid fatty tuna slice..

The best part of tuna, Otoro, with its web-like well spread fat. Almost melt in the mouth.

The sushi is skillfully crafted to give the best cut for optimal mouth feel when enjoying it by diners.

And so, with the considerate Japanese dining culture practice, they have it divided into two smaller portion for lady diner. :)

Again, and never be enough, with the creamiest and tastiest sea urchin!

Sea eel sushi, taste softer and milder than the usual unagi, pairing with the refreshing radish pickle slices. And again, taste at its best.

味噌する, mild tasting Miso soup, with tiny clams and fresh sea kelps in it.

Last, but not least, before the last course of dessert/ fruits, is the diced lean tuna (maguro) and radish handroll. Warm sushi rice in crispy seaweed wrap.

This is not the usual dessert plate. For special occasion like birthday, they served me with both the dessert and Japanese fruits.

Tasted the natural sweetness from the fruits, and a burger-like not-too-sweet delicious blue sea salt ice cream sandwich.

Simply delightful with their radish made candle holder.

It’s just needless to say, the freshest ingredients always give the most premium taste even on its own and at its most natural way of serving. We truly enjoyed it, a lot, a lot. For 2 of us, we spent a total of $588 for a well satisfactory and super filling Yume Omakase Japanese lunch, on a weekday. It’s all worth it, on an occasion. :)

Serving not just the Western, but Hainanese cuisine. Loved their dinner rolls (but not the butter), too.

Averagely RM150 per pax for a 2-course (shared appetizer and main course) and coffee/ chilled drink.

Just came across a random IG post this morning saying that “woman over 40, can never looked as young and as energetic as young girls no matter how well she took care of herself”…… In the first place, why should women over their 40s, to take care of themselves and their appearance, is to compare with young girls…. Why only women over 40 need to be taught by him (a guy at his 20s or so) that these women should and should not do certain things in their life…. Why only women over 40s….. Speechless. Period. #happymothersdaytoall
