I used laksa paste for my chicken “curry” mee, and I actually prefer it this way.

Indeed, the curry paste found a better use. I’ve cooked my favorite curry chee cheong fun (steamed rice rolls) many times with it.

Stir-fry a generous amount of dried shrimps with oil, adding chopped garlic if desired. Pour in curry paste and some chicken or pork soup stock. If you prefer a thicker consistency, using only curry paste works well.

I didn’t follow the thawing directions either. I just broke the solid paste in half to fit into my pot and let it melt slowly. Of course, thawing first would make it easier. :)

Simply heat up the paste without diluting it. If desired, you can add more coconut milk to enhance the creamy texture.

At times, I use the paste to stir-fry curry chee cheong fun.

Fried Curry Chee Cheong Fun, garnished with pork floss, sesame seeds and cilantro.

For a stir-fried version of curry Chee Cheong Fun, stir fry chopped garlic, onion, and shredded carrot in oil. Add cut rice rolls, then incorporate curry paste (2 packets for 2-3 servings for a wetter dish). Enhance the flavor by sprinkling some salt and sugar, as rice rolls can be naturally bland.

If you are using less curry paste to make it less spicy for the kids, simply add the chicken/ pork broth as substitution.
