Easy Chicken & Fish Maw Soup (简易鱼鳔鸡汤)
Wholesome chicken soup with ginseng & danggui

Recipe for Easy Chicken & Fish Maw Soup (简易鱼鳔鸡汤)

An easy, tasty and healthy all-in-one chicken herbal soup. Just throw (almost) everything in the soup pot to boil for 1-2hrs, you and your loved ones will be able to indulge in this wholesome soup as your dinner.

没时间煮饭,没关系。这里有一道极简单有富营养的鸡汤,不但能填饱肚子,还能填满心灵的美味人参药材鸡汤。

Serves 2-3
Ingredients 
Half chicken, cut into pieces, skinned & trimmed fat.
2 rolls of dried fish maw, soaked in hot water & cut
4-5 dried mushrooms, washed, soaked & trimmed stems
3-4 pcs dried scallops, soaked 
3-4 slices Dang Gui
2 small Korean ginseng (whole roots)
2 pcs red dates
1 thick slice of young ginger 
1 teaspoon of goji berries 
1/2 teaspoon salt 
1 tablespoon hard liqueur or D.O.M. herbal liqueur

1200-1500ml water 

供2-3人份
材料
半只 鸡,去皮去多余脂肪
2卷 炸鱼鳔,浸泡热水,切段
4-5个 冬菇,洗净,泡水,取缔
3-4个 干贝,泡水
3-4片 当归
2根 韩国小人参
2个 红枣
1厚片 生姜
1茶匙 枸杞
1/2茶匙 盐 1 汤匙 烈酒或法国郎酒

1200-1500毫升 水

Method 

Easy Chicken & Fish Maw Soup (简易鱼鳔鸡汤) Recipe
Adding of herbal liqueur elevates the aroma and taste of this herbal soup.

(1) Wash each ingredients thoroughly, and cut the ingredients into your desired sizes.

(2) Boil water over high heat, add all ingredients except for fish maw and goji berries. Bring to a rolling boil, skim off any scum on the surface of the water. Reduce heat to low fire to continue simmering for at least 1.5hr. 

(3) Add fish maw, simmer for another 20min. Sprinkle salt, combine well. Add goji berries and drizzle hard liqueur or D.O.M. Heat off and cover lid to let the heat stand for another 5min. Serve hot. 

做法:

  1. 把每种材料洗干净 (该浸泡的照做),切成喜欢的大小分量。
  2. 把一锅水煮开,放入所有材料,除了鱼鳔和枸杞。再把水煮滚后,撇开浮渣。转小火,继续煲1.5小时。
  3. 加入鱼鳔,煮20分钟。加入盐调味。加入枸杞和酒。熄火,盖上锅盖再焖上5分钟。趁热上桌。

A serving with ingredients is less than 300kcal.
一份鸡汤不超过300卡路里。


Tips:
*I used Kampong chicken or fresh chicken. If using frozen chicken, blanch it in a pot of water added with ginger slices first, before adding to the main pot to cook. 
*Remove chicken skin and trim away excessive fat to eliminate oily soup. 
*Goji berries are to be added last to avoid long boiling and retain maximum nutrients. 
*For milder alcohol taste, add liqueur earlier and boil for 5-10min before heat off. Separate additional, for young children’s share.

温馨提示:
*平常都用甘榜鸡或鲜鸡肉。如果用冰冻鸡,建议先将鸡肉过烧开的姜水,才放入汤锅里煮。
*去鸡皮和去脂肪以免鸡汤太过油腻。
*最后要熄火的时候才加入枸杞。无需煮过头破坏营养成分。
*怕酒味太浓,可预早加入酒煮5-10分钟,让酒精蒸发点。有小孩喝,就分开加入。
