My Wok Life Cooking Blog Hainanese Pork Chop (海南猪排) : Easy to Cook. Good To Eat.

“Hainanese pork chop dish should be submerged in less viscous till almost diluted sauce. So, you do not need to thicken it with corn starch slurry.”

This is my version of Hainanese pork chop, and here’s my recipe for you. Taste guaranteed!

Hainanese Pork Chop Recipe

Serves 4
Ingredients
4 large pieces of pork chop
1 egg white, lightly beaten
1 tablespoon of light soy sauce
Pinch of white pepper

1 teaspoon of baking powder
1 cup of plain flour
1 cup of oil (for deep frying)

1 large ripe tomato, wedged
1 slice of ripe pineapple, cut
1 onion, peeled and cut
1 clove of garlic, minced
1 tablespoon of oil

Sauce:
1 cup of ketchup
1/2 cup of water
2 tablespoons of lemon juice
2 tablespoons of black sugar
1 tablespoons of white sugar
1 tablespoon of honey
1 tablespoon of BBQ sauce
1 teaspoon of mirin
Pinch of salt and pepper

供4人份
材料:
4大块 猪排
1个 蛋清,稍搅匀
1汤匙 酱清
少许 白胡椒

1茶匙 发酵粉
1杯 普通面粉
1杯 油(用于油炸)

1个 熟番茄,切块
1片 熟菠萝,切小块
1个 洋葱,去皮切块
1瓣 大蒜,切碎
1汤匙 油

酱汁配料:
1杯 番茄酱
半杯 水
2汤匙 柠檬汁
2汤匙 黑糖
1汤匙 白糖
1汤匙 蜂蜜
1汤匙 烧烤酱
1茶匙 甜酒
少许 盐和胡椒

Hainanese Pork Chop Recipe

Hainanese Pork Chop Cooking Method 

(1) Marinate pork chops with light sauce and pepper. Mix in egg white. Combine flour and baking powder to coat on each pork chop. Leave to set for at least 10 min.

(2) Heat wok with oil over medium fire. Fry coated pork chops till crispy. Dish up. Slice, plate and set aside.

(3) Sauce: Heat clean wok with 1 tablespoon of oil over low fire. Sauté onion, follow by garlic. Add tomato and pineapple. Stir fry till semi soften.

(4) Combine all ingredients of Sauce. Mix well. Pour into wok and simmer for 1-2 minutes. Heat off and pour over pork chops. Serve with steamed rice.

做法:
(1)用酱清和胡椒粉腌制猪排。混入蛋清。将面粉和发酵粉混合,在猪排两面粘上混合面粉。备用。

(2)用中火热油炸猪排,直到香脆。起锅,切片,摆盘备用。

(3)调味汁:用小火将1汤匙油加热干净的炒锅。炒洋葱,跟大蒜。加入番茄和菠萝。炒至半软化。

(4)把所有酱汁成分混合好。倒入锅中,跟锅料一起煮1-2分钟。熄火,把猪排淋上酱汁锅料。配米饭上桌。

Adaption:
1 large potato, wedged
*Hainanese pork chop dish usually added with fried potato. I chose pineapple instead. It’s up to you!

变通处理:
1个 土豆,切块
*海南猪排菜式通常会加上油炸马铃薯。但我选择菠萝。随你好了!

A serving of my Hainanese pork chop counts about 450kcal.

我的海南猪排一份约450卡路里。
