Like I said, eating the snacks on its own is already so satisfying. I have even better way to have both the great snacks and great food together in one. Using a box from them, I proceed to create the following recipe. I am, hence, combining what is essentially a snack into a nice tea time goodness which can also be your nutritious breakfast meal.

Boxgreen Baked Egg Pie:
Serves 2
Ingredients
1 packet of Boxgreen Peri Peri lime Soya Crisps
1 packet of Boxgreen Spanish Marcona Honey Almonds
1 large Russet potato, peeled and preboiled
2 large eggs
1 knob of salted butter
1 tablespoon of milk
1 sprig of coriander leaves, chopped
Toppings:
1 packet of Boxgreen Bean-riffic Protein Boost
More Boxgreen Marcona Honey Almonds
Method
(1) Boil potato until soft. Mix in butter, milk and chopped coriander. Mash together until smooth.
(2) Divide mashed potato into 2 baking bowls. Top each bowl with peri peri soy bean crisps. Break 1 egg each on top, and layer with honey almond. Bake in preheated oven at 170deg Celsius for 10-15 minutes, or until egg is set. Top with more honey almond and bean-riffic protein boost! Serve.

A serving of my Boxgreen baked egg counts about 350kcal.
Tips: May lightly crush the peri peri soy crisps to incorporate into the mash potato for better flavor.
• This recipe advocates healthier and simpler meal, and with the flavorful crisps and nuts in it, this dish doesn’t require any extra seasoning or much condiments. In any case if stronger taste preferred, add salt and pepper. Or, you may load more amount of boxgreen snacks in it.
