Snow Cod Pot (鳕鱼煲)

Just as I said, this all-in-one fish dish was amazingly simple to assemble. Quick, easy and healthy.

It’s most suitable for young children as well as adults, in fact, all ages, to enjoy. Super healthy and delicious fish, plus vegetables of different colors, what else could we ask for? :)

Serves 4
Ingredients
1 large red onion, thickly sliced into rings
1 large Russet potato, thinly sliced
6-8 pcs of cherry tomato, thickly sliced
1 thick slice of Snow Cod fillet (about 250g)

1 tablespoon of light soy sauce
1/2 teaspoon of garlic salt
1/2 teaspoon of coarsely ground black pepper

Method
(1) In a pot, arrange onion on the base. Next, arrange potato slices on top, followed by cherry tomatoes.

(2) Place cod fish fillet on top of the vegetable stacks. Add seasonings. Cover pot with lid and simmer on low heat for 30 minutes. Heat off and dish up to serve.

This healthy fish & vegetable dish counts less then 100kcal per serving.

Note: Suitable for children 18m and above.

Tips: I did not skip the seasoning for my dish. For young children, you may reduce or omit salt, if desired.
* Cod fish should be in thick slice, or its texture might turn a little bit dry after 30 minutes of simmering. Otherwise, add the fish only 10 minutes before the cooking is done.
* This is not a saucy dish. If you want more sauce to the dish, add some water and sesame oil to it.
