What is Frittata
Frittata, an Italian egg-dish similar to an omelette or crustless quiche, enriched with additional ingredients such as meats, cheeses, or vegetables. One of the key ingredients to make delicious Frittata is the butter which helps to silken the overall consistency in order to achieve a smooth mouthfeel. To make it healthier, milk can be used to replace butter, though.
For my recipe of using pre-cooked dishes, now we may skip the stove-cooking step which requires in the tradition frittata recipes, and go to the oven direct. Let’s see how I made this as easy as 1-2-3.

意式烘蛋就是将打散的鸡蛋与小片的奶酪, 蔬菜或肉丁等,先煎后烤制作而成的。它就类似我们常吃的俺列蛋一样。但是俺列通常是一人份,而意式烘蛋也是较大份量的,可切成几片一起分享。而且意大利式的烘蛋,奶油成分很重要,因为奶油能使蛋饼更加顺滑。现在人们比较讲求健康的话,用牛奶代替也行。
其实,还有一个重要的区别就是意式烘蛋要先在火炉上煎煮,把食材煮熟后,再放入烤箱里烤熟。俺列就单一火炉上煮熟即可。
今天跟大家分享的是更简单又方便的意式烘蛋做法。大家都很多时候会剩下饭菜,鸡肉鱼肉之类的菜肴…… 隔天再煮热吃回一样的菜肴也不是知味了,也闷了这样…… 所以我们可以用这些剩余的菜肴做成意式烘蛋来当早餐或者午餐来吃。好吃又简单。隔一个晚上而已,终好过等到晚上再吃回一样的东西。
因为是用煮好的剩菜,就不必开炉把生菜生肉先炒过来用,省了很多时间。”先煎煮”的那一步骤也就可以免了。分配好了直接拿去烘烤就行了。
食谱简单,做法犹如1-2-3!

Serves 2-3
Ingredients:
1 small bowl of leftover stir fried broccoli & carrots, chopped up
1 small bowl of leftover diced chicken meat
6-8 cherry tomatoes, halved
40g of grated cheddar cheese
40ml milk
4 large eggs
1 dollop of hard butter
Pinch of salt and black pepper
Olive oil (for brushing the skillet base)
Topping: 2 tablespoons of tomato paste (Optional)
Garnish: garden rocket or cilantro
Method:
(1) Crack eggs into a large bowl. Add milk and butter. Whisk egg until fluffy. Add salt and pepper. Combine well.
(2) Brush skillet or oven proof bakeware with oil to prevent sticking. Lay leftover dishes and cherry tomato in the greased bakeware. Pour in egg mixture. Sprinkle grated cheese.
(3) Place in preheated oven to bake at 180c for 15 – 18 minutes. Top with tomato paste, garnish, cut to serve.

材料:
1小碗 剩下的花椰菜和萝卜,切碎
1小碗 剩下的鸡肉丁
6-8颗 小番茄,切半
40克 奶酪碎 (切达起司)
40毫升 牛奶
1小块 牛油
少许 盐和黑胡椒
橄榄油 (刷烤盘)
配料: 2汤匙 番茄酱
点缀:芝麻菜或芫荽
做法:
- 把鸡蛋打入碗中。放牛奶和牛油,把蛋打发成蛋液。加入盐和黑胡椒,拌匀。
- 在烤盘上刷一层油,以防粘锅。在烤盘里铺上菜,鸡丁和小番茄。倒入蛋液。再铺上奶酪碎。
- 放进预热烤箱,180度烤15-18分钟。淋上番茄酱和点缀后,切块,即可上桌食用。
1 serving of my Frittata counts less than 160kcal.
一人份的意式烘蛋只有160卡路里。
Tips: Dave the washing, use only one plate to do this is good enough, actually!
