Homemade Stewed White Bee Hoon Recipe (自家白米粉)

Enjoy this luxurious yet simple 1 dish meal during Chinese New Year.

“Stewed bee hoon in white gravy. Delicious~ 米粉用焖的更美味!” 

“White Bee Hoon” have been popular for a long time. It’s not stir-fried, but using the stew cooking method. This bee hoon dish is served with some gravy, making it more flavorful and moist.

Don’t let the long list of ingredients scares you. It’s really very simple to cook. The toppings listed here in my recipe can be adapted, more or less, to you liking.

For 4 people
300g rice vermicelli (bee hoon), soaked 
8pcs large tiger prawns
8pcs large fresh scallops 
80g fishcake, sliced
150g meatballs
200g fresh mustard greens, cut 
30g spring onion and cilantro, cut short 
1 carrot, thinly sliced
2 cloves garlic, minced
2 eggs
500-800ml water (more can be)

1 teaspoon chicken powder
1 teaspoon salt
2 tbsp light soy sauce 
2 tbsp oyster sauce
2 tbsp oil
Dash of sesame oil
Dash of white pepper 

300克 米粉, 浸软
8只 老虎虾
8个 大带子 
80g 鱼饼,切片 
150克 肉丸
200克 芥菜,切段
30克 青葱芫荽,切段
1根 萝卜,切花式薄片
2粒 蒜头,剁碎
2颗 鸡蛋
500-800毫升 清水 (可以更多)

1茶匙 鸡粉
1茶匙 盐
2汤匙 酱青
2汤匙 蚝油
2汤匙 油
麻油 少许
胡椒粉 少许

1. Heat oil in wok, add fish cakes and meatballs, and fry until slightly browned. Add garlic, sauté until fragrant. Heat up, add bee hoon and water, bring it to a boil. Reduce fire, and let bee hoon cook through and soften. Add more water, if it’s drying up too soon. 

2. Add seasonings, stir fry to combine. Add prawns, scallops, carrot and mustard green, stir fry. Cover wok with lid, and simmer until the ingredients are cooked through. 

3. Add eggs, stir fry to mix evenly. Add spring onion and coriander, cover wok with lid again, and simmer for a few minutes. Heat off. Serve immediately. 

1. 热锅加油,加入鱼饼和肉丸,煎至微黄。加蒜头,炒香。大火,放入米粉和水,煮沸。中小火,让米粉煮软。如果水吸干得太快,可再加水。

2. 加入调味料,炒均匀。加入大虾,带子,萝卜和芥菜,略炒。盖锅,小火焖煮至材料熟透即可。

3. 打入鸡蛋,炒拌均匀。加入青葱芫荽,再盖锅,焖几分钟。熄火,出锅。上桌。

喜欢什么就加什么…… 以平时来说,简单肉片和鱼饼也不错!
Simply add sliced pork meat and fish cake will also make this bee hoon dish great!

Use of fresh mustard green as my veggie in this recipe due to festive season as mustard green symbolizes longevity and consistency. You may replace it with Napa cabbage or any leafy veggie. 1 serving counts about 450kcal.


Tips: Bee hoon absorbs water pretty quickly. Add more water until your desired amount of wetness to serve.
