No one in Singapore doesn’t taste hor fun before. For all you know, it’s one of the most popular food in Zhi Char stall’s menu.

I always like to cook these delicious local food at home, with a healthier twist to it so that my loved ones could enjoy eating without compromising their health, or at least, less guilt for eating more. :)

Yes, eating the sinful stall bought hor fun dish often make you feel ‘fat’ as it is usually cooked with the hor fun being deep fried beforehand, to make it more tasty and less sticking.. But for me, I wouldn’t waste so much oil to pre-deep fry the hor fun for my home cooking. Simply stir fry (with a little bit more oil than usual cooking) it! Of course, if you wanna make it more ‘authentic’, follow the deep frying method, with expect of higher calorie intake in mind though.

Ingredients
600g of broad hor fun (河粉)
200g of prawn, shelled and deveined
100g of pork meat, thinly sliced and seasoned with light soy sauce, pepper, sesame oil and corn starch
50g of pig’s liver, thinly sliced and blanched till almost cooked
Fish balls, halved
Fish cake, sliced
Cabbage or Chye Sim, cut
2 eggs
3 cloves of garlic, minced

1 tablespoon of light soy sauce
1 tablespoon of fish sauce
1 teaspoon of salt
1 teaspoon of sugar
Pinch of white pepper
1 large bowl of water (about 600g – 800g, amount adjustable)
About 1/2 cup of oil (leave & separate 1 tablespoon for later)

1/2 small bowl of corn starch slurry, made of 1 tablespoon of corn starch in abt 100g of water (for thickening gravy)

Method
(1) Heat non-stick wok with 1/2 cup (minus 1 tablespoon) of oil on medium fire. Loosen the hor fun and add to stir fry. Need not to constantly stir fry, but leave it to brown with occasional stirring. Add 1 tablespoon of light soy sauce and stir fry to combine well. Heat off and dish out. Reserve for later.

(2) In the same wok, add 1 tablespoon of oil over medium heat. Add garlic and stir fry till aromatic (browning is not necessary). Add seasoned pork slices and stir fry till almost cooked. Add prawns, fish balls, fish cakes and cabbage and stir fry for 1-2 minutes.

(3) Add water until ingredients are fully covered. Cover wok with lid and let it simmer for 3-5 minutes. Remove lid and add salt, sugar, fish sauce and pepper. Stir fry to combine. Break eggs into the wok and stir immediately to create egg drops effect. Add blanched pig’s liver. Before heat off, add corn starch slurry to thicken the gravy.

(4) Divide hor fun into plates. Pour gravy and ingredients into each plate proportionately to serve immediately.

If you find your home cooked hor fun dish is less tasty than the outside stalls, that’s because no MSG in your cooking. If you really wish to, simply add 1 tablespoon of chicken granule (get those without added MSG types), and that will make your cooking tastier yet healthier enough. I tried that.

But trust me, with my recipe below, your family would certainly appreciate and indulge in what you have cooked for them than having the outside one. With loves. Tell me, if you agreed. :)

A portion of my hor fun dish counts about 450kcal.

Tips: Broad type of hor fun is not commonly found at supermarkets. It is usually available at wet market instead. Look for those stalls which sell fish balls and tofu, they usually sell noodles including broad hor fun. I got it from wet market at Ang Mo Kio Central. Ask for $1 worth of amount would be sufficient to feed 3-4 person.
* In any case, if really unable to get the broad type, you may want to settle with the usual kueh teow noodle, if you don’t mind. But of course, expect less ‘spongy’ texture without the first choice, and it won’t do like you are cooking the local favorite hor fun dish though.
* Blanch the pig’s liver separately beforehand is to prevent the liver slices from over cooking. Adding it last into the wok so that the liver taste will not affect or over-whelm the overall flavor of the dish. Well, adding pig’s liver to this hor fun dish is optional, after all.

Taiping, roughly an hour road ride before heading Taiping, roughly an hour road ride before heading up Ipoh. We spent a night there for a short visit in this small town. It’s not like Ipoh with lots of good food and sightseeing places eg temples and cave. Taste of the food there was just decent, more like catering to the taste of the locals. :) However, the town itself has a unique serenity. Really nothing much to recommend, but it’s good to have a look.

My first time to queue for mooncakes for exactly 3 hours with no less! This old brand mooncake in #ipoh #malaysia is one of the most affordable and comforting mooncakes, by far. To me, most importantly, it’s not overly sweetened. Its paste filling is considered smooth, and mooncake skin is thin and soft enough. Only if you are not going for any elegant fancy packaging, but for some decent tasty and great price mooncakes for the festive…. and don’t mind the queue…. 🤪 

Worth it? 😎 
Tips to buy: go early morning, or go 2-3 months before the festive month next year. 
Tips to eat: wait for at least 3 days from the purchase/ baked day to consume.

How to make: 
1. Bagel, halved horizontally. Spread butter on cut side, toast at 160deg c for 6min. 
2. Beat 2 eggs. Add 1 tablespoon milk. Salt and pepper to taste. Scramble egg. Half way cooking, add shredded mozzarella cheese. Continue scramble until desired fineness of the egg. Usually 3/4 firm with some wetness in it will be perfect. 
3. Spread cream cheese on one side of the toasted bagel. Top lettuce and 1 slice of turkey ham, followed by scrambled egg. 
4. Place 3 large pieces of smoked salmon in a roll-up form. Drizzle some mayo. Plate and serve.
