Vegetables Fried Rice (Vegetarian Recipe)

This year, Vesak Day coincides with Lunar First day of May. Raised as a Buddhism devoter, we had no reason not to take vegetarian for the day! Everyone in the family had to follow vegetarian diet on each and every Lunar 1st and 15th of the Lunar month since young. So, for this special occasion, I cooked fried rice, with assorted vegetables and vegetarian (mock) meat. I called it Vegetables fried rice.

Taste of my vegetables fried rice was varied from the usual fried rice. It relished more like fried yam rice, as I have added yam it my recipe. I don’t call it a yam rice, as I had also the long beans and Chinese cabbages in it. See, it’s a vegetables rice (smile)! It tasted more robust as compared to fried rice with usual ingredients, but never too overwhelming for a great taste. I love the fragrance of yam taste in the palate, it was kinda addictive (chuckling). More

Stir-fried Chinese Spinach with Goji Berries (清炒枸杞子苋菜)

This is a well-known ‘baby vegetable’. When baby starts taking solid or semi-solid meal, Chinese Spinach has always been the first vegetable choice to be cooked in porridge. Mince or blend the vegetables, before adding into baby’s porridge cooking. More

Sweet Red Bean Soup with Lotus Seeds

“Easily made Sweet Red Bean Soup to sweeten your palate and smile”

Red bean soup (with round rice balls most of the time) is commmonly cooked and to be eaten during wedding ceremony in Chinese customary. Color of red signifies happiness and fortune, while sweet dessert represents ‘sweet’ and good life. Hence, SWEET RED bean soup will be presented in many occasions such as wedding and birthday celebrations.

As for me, I like to take red bean soup regularly, for its high Vitamin B values. Some women believe in taking more red bean soup after their monthly menstruation cycle.

I have added with lotus seeds, for its contrast in colour to my red bean soup to make it looked more presentable, at the same, get to eat some of these nice lotus seeds. More
