Cooked this for my lunch meeting yesterday. Knowing that the cakes and desserts were the “highlight” of the session, we tried to keep our main course simple. Yup, made this meatball tomato pasta as part of my contributions to the potluck meal, I was glad that many of them enjoyed it pretty well!

Really nothing fanciful, my pasta dish was just one of the many versions. Of course, with a twist to adapt the pasta cooking as my own.

Sweet Spicy Dipping Sauce for Grilled Fish

Instead of the usual dipping sauce of chili Padi in light soy sauce, I think this special mixed sauce goes even better with the grilled or pan fried fish.

Less salty with a tinge of sweetness, it gives the barely seasoned fish meat a full flavor by just dipping it into this refreshing sweet spicy sauce. Yes, you do not need to add extra seasoning to marinate the fish to make your grilled fish meal a delicious hit. With the dipping sauce.

Sweet Spicy Dipping Sauce for Grilled Fish

Dipping sauce specially made for grilled or pan fried fish dish. At home or for your barbecue party

Ingredients

    Ingredients (A)

  • 3-4 chili Padi (Bird Eyes Chili), cut
  • 
2 cloves of garlic, minced

  • 2 tablespoons of Thai fish sauce

  • 1 teaspoon f lime juice (freshly squeezed from 1 small lime)

  • 1 teaspoon of sugar
Pinch of Italian herbs
    Ingredients (B)
  • 3-4 whole small fishes (Kampong fish or Yellowtail Scad)
  • Pinch of salt
  • 2 tablespoons of oil

Instructions

  1. Make 2-3 slits on both sides of the fish.
  2. Sprinkle salt.
  3. Heat frying pan with oil over medium-low Fire.
  4. Grill fish until both sides are browned.
  5. Mix all ingredients (A) in a saucer/ small bowl.
  6. Stir and grin sugar until dissolve.
  7. Serve with grilled fish.

Notes

Tips: Adjust amount of sugar for more or less, as desired taste. * It's ok if you do not have Italian herbs at home, add chopped parsley instead. I preferred Italian herbs as it dedicates a more comprehensive flavour to my sauce. :)

If you are a vegetarian, use the mushroom sauce. Otherwise, the Abalone sauce is the best to go with this stir fry! That’s because the golden spring mushroom (金源菇) used in this recipe yields a tinge of ‘seafood’ taste after cooked. Hence, adding abalone sauce was sure to good in enhancing the flavor of this seafood-tasted mushroom in the dish.

This recipe was created for my Christmas dinner in 2010. We had chicken chop the year before, and so, I thought of cooking grilled fish this time. I always have craving for grilled fish fillet recently, but I always cook Chinese meals, if not pasta dishes in normal days. So, this Christmas gave me a good opportunity to explore this grilled fish recipe since I usually cook Western meal for Western festivals as it sounds more appropriate to such celebrations. Further more, grilled fish is much easier to prepare and cook. I wanted a quick cooking for this festive dinner so that I could spare some good time for making my own log cake.
