Mango Strawberry Cream (Meringue) Cake

“Birthday Cake? Yes, this surely an impressive piece to make!”

Wanted to make my usual mango cake with the packet of Optima sponge cake premix given by a friend. However, wasn’t really content with baking a cake with premix this time, also had an urge to decorate my cake with mango roses, this would make my cake top heavier than usual, I do not want my cake to collapse. Thus, here I had this idea to make a denser cake so that it could hold my elaborated decoration/ topping well. I used the premix to make my own recipe this time.

Yes, I cooked this for my son’s lunch meal. Son doesn’t eat much at lunch since he always on full breakfast. He likes soup, he likes fish, he likes apple. So this is the perfect soup meal for him. Healthy, balanced, natural sweetness, yet, flavorsome. Son finished whole big bowl of soup including the fish and apples as well as other ingredients in it.

“Many reasons to start eating healthy oat meal porridge”

It has been in trend to make overnight oat meal for breakfast in the breastfeeding community, but I have more reasons to start having it on daily basis. Not only for increasing break milk supply, I need this healthy low-fat meal to kick start my dieting plan, too.

However, as many would agree, who likes oat porridge?! So many people, including myself, were having this impression that oat meal is for the sick patient, and it taste yucky…. but but, let me tell you now, it’s not true!

Snow Pear Herbal Tea


“Great herbal tea for hectic life”

Just come back from a 2-stop trip, all the way up to the north of Malaysia. We visited The Lost World, Tambun, Ipoh, followed by Hatyai, Thailand, in 6 days. :)

Yes, very tight schedule. That’s why we were worn out after the trip. Body heat arose with feverish feeling. I knew it was time for herbal tea, then.

Snow pear has its cooling effect for such heatiness in body. To eliminate ‘heat in liver’ (we referred it as 肝火 ‘Gan Huo‘), I added Sha Shen (沙參) which claims to cleanse and rejuvenate liver health.

ZESPRI® Kiwifruit wrote to me recently, asking if I was interested to try their kiwifruit so as to create a recipe using kiwifruit. Yes, why not? I think my readers and friends would surely like to cook a dish using fresh fruits, that was my thought.

Kiwifruit, loaded with vitamin C (2X the amount of orange), dietary fibre, potassium, folate, vitamin E, carotenoids and other antioxidants. It has low GI and is low in fat, and calories (<60kcal/100g).
