I thought something home made would be great and personal to show your appreciation to the teachers. I have an easy and quick cookies recipe here to share. The cookies were scrumptious and really easy to make. Success rate was almost 100%.
You don’t need to scout for expensive or rare ingredients for this goodness. What I used were simply the basics you probably already had in your kitchen pantry. Or, head down to any of the supermarket, you would be able to get them all at once. Bake by your own, and pack them in some nice and special gift boxes, remember it’s your effort counts the most. But of course, with your delicious cookies to impress!
Yes, you guessed correctly. It’s that in-trend butter cookie making. My copycat of “the copycat (of) Jenny bakery cookies” from a blog which I happened to chance upon one day. I have not tried the original Jenny bakery cookie yet, and had no intention to ‘challenge’ this popular bake. I just thought the recipe shared in this blog, JoyMadeThese (thank you) looked really easy to make, with just simple ingredients needed. So, I baked.

I have been eating overnight oat porridge in the past weeks, for milk supply as well as losing weight. No more eating out breakfast at McDonald or IKEA Cafe, I determined to shed away the unwanted fat from my last pregnancy! However, I really need to go out early in the morning tomorrow, I couldn’t stay back for oat meal breakfast… there suddenly had an urge to bake some lactation cookies. I guess I could just bring some cookies out with me tomorrow morning, and to have these cookies for tea in the next two weeks!

As usual, some baking staples were left untouched on the kitchen shelves for quite a while. I was afraid they would end up in the trash bin as expiry dates were close. I just pulled these items out and made my cookies with instant ideas (chuckles).
These cookies turned out excellent and the first batch of my bake was simply wiped out the moment they were ready to be eaten. Even for me, a conscious diet watcher, I ate quite a bit of them, too. Why so? I was not afraid because… I baked them with shortening instead of butter! All-vegetable shortening contains 50% less saturated fat than butter. Further more, I had added less sugar than what commonly uses in many recipes. It’s sweet enough to my liking.

Thanks to my colleagues’ trial of the pineapple tart making, Margaret and LinSi. Their successful pineaple tarts making gave me confidence to set out my adventure in baking pineapple tarts, first time (chuckling). Both gave me their recipes, and I envisioned these two recipes as one to my first tart production of its own. A million of thanks to them!
Of course, pineapple tarts are always one of the staple food of Chinese New year festival. I, too, want to make some for my loved ones.

This is the simplest cookies recipe for first-timers and beginners. I am, one of the first timers in baking cookies, too (laughing)! Yes, this is the result of my first cookies baking. Yes, the cookies taste delicious. I brought them to the office the next day, to share with my colleagues. The feedback was good, and I have impressed them with these chocolate cookies, especially the texture. Shapes are kinda odd (I had square and round shapes from all 4 rounds of baking.. ha..), but taste is perfectly good. It feels so crispy to chew and the level of sweetness is just perfect for everyone.
