Easy Homemade Blueberry Chia Seed Jam

“Authentic and guaranteed freshness. This awesome homemade blueberry jam will definitely blow you away!”

Yes, this is. This is the easiest way to make your own fruit jam. Nothing fanciful, instead. Just for the freshness and goodness here. You might wonder why sugar if it’s healthier homemade jam. Low pectin fruits like blueberries, need it. Yes, you could either add the store bought commercial pectin from baking supplies stores, or add sugar, to preserve the jam in a more natural way. I choose the later, but all, I used towards healthier version of sugar which is the black sugar.

Chia seeds, another goodness which not only helps to thicken the jam naturally (chia seeds would swell in liquid substances), it provides healthy elements such as plant base omega 3, omega 6, dietary fiber, protein, calcium, and more. The thing is, chia seeds will never affect the taste of the blueberry jam in any way. It’s tasteless. Yes, it’s indeed a superfood! More

Low-Carb Cheesy “Toast”

“My toast ain’t bread. It’s low-Carb food. It’s vegetable!”

Yes, having on diet to shed away the final round of my baby weight for the past few months, I learnt to eat low carb food. This is one of the dishes I have learnt to make, to replace high carb ingredients, once in awhile.

You may call this a “toast”, “pancake”, or “Rosti”. It’s made of mashed cauliflower as its main. I liked it a lot as it’s just yummy and doesn’t taste like vegetable. Even my toddler son ate it. To me, it resembled a cheesy pancake meal. :) More

Vietnamese Summer Rolls with Spicy Peanut Sauce

“A side dish, that’s as good as a 1-dish meal!”

When come to Vietnamese food, the summer rolls are the sides which I would never missed. Yes, this is my favorite side dish in the Vietnamese cuisine. So much so that I would want to make my own so that I could have it anytime, even at home. And, I would eat summer rolls as a meal, sometimes. Why not, it has all the vegetables, meat, prawns and bee hoon in one! :)

Summer rolls are not difficult to make, but needed quite a bit of preparation work done. I wouldn’t mind, because I knew I would have the best spicy peanut sauce made by myself that I could adjust the taste best suited to my liking. You are right, the summer rolls would never complete without a nice dipping sauce. More

Mango Sticky Rice

“Delicate dessert to be made at home. Who says you can only eat this in the Thai restaurant?”

When I had craving for food which normally served in the restaurant, I would always try my mean to cook it at home. Not so the economic reason sometimes, I enjoyed the satisfaction and achievement for being able to whip up food which looked deceptively difficult to assemble and overvalued by the market. It just made me feel contented to see my loved ones enjoy my creation more than having it outside.

This stick rice with mango wasn’t too difficult to assemble. In fact, the cooking was pretty versatile. You may steam the glutinous rice with any steamware you have in your kitchen as long as getting the sticky rice cooked to the right texture you liked (usually done in 20-25 minutes). If my recipe for the coconut sauce isn’t what you prefer, no fret, too. For one who likes the saltish flavour to be more visible in the coconut sauce, add bigger pinch of salt. If you have sweet-tooth, increase sugar, instead. Otherwise, use just the coconut milk without any addition of condiment. What you need is to taste while cooking to find your perfect flavor. No hard and fast rule. Keep trying, keep cooking. Enjoy! More

Cheesy Mashed Potato with Cream Sauce Gravy

“It’s a mashed potato well filled with gravy and delicious toppings.”

It looked like a mashed potato cake to me. It could be served as snack for tea, a side for dinner, and even a main for lunch. Homemade cheesy mashed potato is delicious.

I used the store-bought gravy pack which needed some assembly to be done. From Ikea food market. Yes, just to try out. It was tasty, indeed. (*Actual pic of the cream sauce pack was posted in my Instagram or FB page’s comment) More

Cheesy Stuffed Potato (Air-Fried)

“Easy & scrumptious Western food which can be a meal by itself, made with air fryer!”

Singapore IT show was happening since two days back, and I got a great deal on a XL digital air fryer as an upgrade to my existing smaller one. I thought it would be a good to start using it to make some delicious food as soon as I could, as a form of reward to him. :)

This stuffed potato was delicious, suitable for all ages, and could be served as party snacks, or as a meal! With the help of air fryer, the potato was nicely baked. Its potato skin was crisped to its perfection. And, this recipe is surely a great way to hide away the vegetables! More

Seaweed Crisps (Air-Fried)

“One of the easiest air fried CNY snacks”

Yes, I considered this the easiest and relatively healthier snack for the Chinese Lunar New Year celebration, adding on to its healthier cooking method, air frying.

This snack could be made in various ways and flavors. No doubt, those added with seasonings taste better, at the same time, less healthy. I reckoned homemade with minimal (better types of) ingredients. Mine? Moderately good, in term of taste and nutritional value, good enough to let your older toddler to enjoy it. :) More
