Low-Carb Cheesy “Toast”

“My toast ain’t bread. It’s low-Carb food. It’s vegetable!”

Yes, having on diet to shed away the final round of my baby weight for the past few months, I learnt to eat low carb food. This is one of the dishes I have learnt to make, to replace high carb ingredients, once in awhile.

You may call this a “toast”, “pancake”, or “Rosti”. It’s made of mashed cauliflower as its main. I liked it a lot as it’s just yummy and doesn’t taste like vegetable. Even my toddler son ate it. To me, it resembled a cheesy pancake meal. :) More

Papaya Snow Fungus Sweet Soup with Black Sugar (木瓜雪耳黑糖水)

Just realized that I did not have my papaya snow fungus sweet soup recorded. I thought I did, but apparently only having the savory version as well as the adaption with winter melon. Well, this was a great time to showcase it as I boiled this nourishing goodness with Okinawa black sugar instead of rock sugar. It turned out to be even tastier and smoother mouthfeel. For sure, black sugar is healthier version of sugar than other kinds of sugar, especially for women, as it provides nutrients such as Iron, Calcium, Potassium and Magnesium. Plus, this sweet soup helps in nourishing the lungs as well as skin complexion. What’s more can I ask for?! :D

The black sugar “kakutou” I used was brought back from Okinawa by my sister. However, not to worry, you will still be able to get Okinawa black sugar or any other brands in Singapore’s supermarkets. I mixed Taikoo brand which I’ve gotten from NTUC Fairprice (Finest). In any case, rock sugar will do the job, too. :) More

Avocado Cake with Chocolate Cream Cheese

Avocado is definitely a superfood for all ages due to its high nutritional value. However, not everyone would accept its creamy texture and taste. I personally loved it so much that I would eat it whenever I could, but it wasn’t the case for my children. In order to make them eat, the taste of the avocado mustn’t be present in their palate. If you, too, encounter hard time getting your young ones (and even the big ones) to eat avocado, here I have a great & simple solution for you. Here you go, having the superfood disguised in my little sweet treat. Who says this is not one of the best ways for treats & “tricks”.. :D

1 ripe avocado, peeled and lightly mashed
80g of butter
80g of caster sugar
1 large egg
50 – 60ml milk
150g of plain flour
1 teaspoon of baking powder
1/4 teaspoon of salt

Strawberry Cheesecake Sponge Cake

This romantic and luscious cake that suits all occasions. I made this because my son loved strawberry and cheese. I thought the combination would make him thrilled, even on his dad’s birthday. Yes, this was the birthday cake for the dad’s, but with favourable to son’s liking. :D

Indeed, son requested 3 servings at one go, and wanted to go on, if I did not stop him. In fact, it was well-liked by everyone. Even I supposed to watch my diet, couldn’t resist and had 2 slices of it. :) More

The media news and durian experts speculated that MSW (Musang King) durians would drop its price this August. So, I thought it’s the best time (again) to eat the king of fruits, durian. To me, it’s more that just eating this creamy fruit, incorporate yummy durian into your homemade dessert and baked goodness would be an excellent idea, too!

Mango Sticky Rice

When I had craving for food which normally served in the restaurant, I would always try my mean to cook it at home. Not so the economic reason sometimes, I enjoyed the satisfaction and achievement for being able to whip up food which looked deceptively difficult to assemble and overvalued by the market. It just made me feel contented to see my loved ones enjoy my creation more than having it outside.


This stick rice with mango wasn’t too difficult to assemble. In fact, the cooking was pretty versatile. You may steam the glutinous rice with any steamware you have in your kitchen as long as getting the sticky rice cooked to the right texture you liked (usually done in 20-25 minutes). If my recipe for the coconut sauce isn’t what you prefer, no fret, too. For one who likes the saltish flavour to be more visible in the coconut sauce, add bigger pinch of salt. If you have sweet-tooth, increase sugar, instead. Otherwise, use just the coconut milk without any addition of condiment. What you need is to taste while cooking to find your perfect flavor. No hard and fast rule. Keep trying, keep cooking. Enjoy! More

Grilled Mixed Herbs Salmon & Tomatoes (Air-Fried)

Crisped and browned on the surface, but tender and moist inside. That’s how my grilled Salmon was. I usually cooked this way when I wanted to have pasta or noodles in sauce, or rice with other saucy dishes.

I wouldn’t serve as it is as a main course, if I did not make a sauce to go along, even though it wasn’t dried at all. I just thought it would be a bit plain.. unless to make some wet sides eg baked beans, gravies baby corns, mashed potato with sauce, etc. Salsa or cheesy spinach might be good, too. Those would do.. Alright, I should do the Western main course style the next time. :)

Oh yes, this super easy and delicious fish dish is meant for the busy parents, working couples and moody simplistic personnel. Yes… It took merely 20 minutes, from preparation to cooked.
