There are many ways to hand make this ice cream, but below would be the easiest way to do. Learnt this from a TVB cooking show hosted by Ms Maria Cordero (Fat Ma), in her latest cooking show, Good Cheap Eat 2 (食平DD), where she handmade Tiramisu ice cream as her dessert of the day. I have been eating overnight oat porridge in the past weeks, for losing weight. No more eating out breakfast at McDonald or IKEA Cafe, I determined to shed away the unwanted fat! However, I really need to go out early in the morning tomorrow, I couldn’t stay back for oat meal breakfast… there suddenly had an urge to bake some cookies. I guess I could just bring some cookies out with me tomorrow morning, and to have these cookies for tea in the next two weeks! Went to a baking workshop on my last Valentine’s day to bake this cake which you have seen my cake photo posted in my FaceBook page on the very night itself.
My intention in attending the workshop was to try and have a feel on the making of fondant, in fact, but turned out that the fondant-making wasn’t happening, and had replaced with vanilla Swiss butter cream as the frosting. :( Me, disappointed? Yes. Me, happy? Yes, still. Reason being happy was able to share and learn up something during the hands-on workshop. Oh ok, yes, I had some over ripen bananas leftover on my countertop. I always wanted to bake apple-banana cake that is suitable for young toddler to indulge in. And, here you go.
This apple-banana cake was great. Moist, soft, with natural sweetness from the ripped banana and apple sauce, mostly. Also, I added loads of banana and did not blend it thoroughly into the batter to leave some banana bits in the bake on purpose. So, yes, your baby would love to chew on the real banana in the cake.
