Mango Strawberry Cream (Meringue) Cake

Wanted to make my usual mango cake with the packet of Optima sponge cake premix given by a friend. However, wasn’t really content with baking a cake with premix this time, also had an urge to decorate my cake with mango roses, this would make my cake top heavier than usual, I do not want my cake to collapse. Thus, here I had this idea to make a denser cake so that it could hold my elaborated decoration/ topping well. I used the premix to make my own recipe this time.

Yes, cake might be dense, but neither hard nor dry, though it’s not really the soft and fluffy kind. It was still moist enough. But at least, for sure, taste of this cake was great. Stronger flavor and more aromatic, too. And most of all, no worries of toppling cake. :) More

Lactation Cookies for Diet Watching Nursing Mums

I have been eating overnight oat porridge in the past weeks, for losing weight. No more eating out breakfast at McDonald or IKEA Cafe, I determined to shed away the unwanted fat! Rainbow Cake with Swiss Butter Cream Frosting

Went to a baking workshop on my last Valentine’s day to bake this cake which you have seen my cake photo posted in my FaceBook page on the very night itself.

My intention in attending the workshop was to try and have a feel on the making of fondant, in fact, but turned out that the fondant-making wasn’t happening, and had replaced with vanilla Swiss butter cream as the frosting. :( Me, disappointed? Yes. Me, happy? Yes, still. Reason being happy was able to share and learn up something during the hands-on workshop. It’s always good to attend some culinary/ baking workshops to share, regardless how well you cook/ bake, won’t you agree? :) More

Chocolate Coffee Birthday Cake (with Chocolate Cream Cheese Frosting)

Papa’s birthday, and he doesn’t like to celebrate elaborately. So, nothing huge, seriously, just a (western) home-baked, and (Chinese) home-cooked ‘Mee Sua’ dinner, yesterday. He might not like the sweet effort, but he would at least appreciate the mee sua (Chinese thin strands wheat flour vermicelli) soup with chicken drumstick and 2 red hard-boiled eggs, a traditional Chinese ritualized birthday meal.

Yields 9-inch cake
Ingredients
2 ¼ cups (315 grams) of self raising flour, sieved
1 teaspoon of baking powder
1 ½ cups (300 grams) of granulated sugar
¾ cup (172.5 grams/ 1 ½ sticks) of butter, softened
200ml of full cream milk (coffee flavoured milk, if wished), room temperature
3 medium eggs, room temperature
3 teaspoons of coffee essence
1 tablespoon of vanilla essence
100 grams of semi-sweet baking chocolate, melted (into 3-4 tablespoons) More

Delicious Homemade Chocolate Rice & Raisin Almond Cookies

As usual, some baking staples were left untouched on the kitchen shelves for quite a while. I was afraid they would end up in the trash bin as expiry dates were close. I just pulled these items out and made my cookies with instant ideas (chuckles).

These cookies turned out excellent and the first batch of my bake was simply wiped out the moment they were ready to be eaten. Even for me, a conscious diet watcher, I ate quite a bit of them, too. Why so? I was not afraid because… I baked them with shortening instead of butter! All-vegetable shortening contains 50% less saturated fat than butter.
