XO Crab Noodle Soup (XO螃蟹米粉汤)

Serves 4

Ingredients 

1-2 tablespoons of XO liquor 

2 medium fresh crabs (each abt 500g) 

500g thick bee hoon 

2 tomatoes, cut into wedges 

1 head Romaine Lettuce 

1 large thumb of ginger, thickly sliced 

1 clove of garlic, minced 

1L chicken stock 

100-150ml cooking cream 

1 tablespoon of Thai fish sauce 

1 tablespoon of cooking oil 

Salt and white pepper to taste

材料

1-2汤匙 XO烈酒

2个 中等新鲜螃蟹(每个约500克)

500克 粗米粉

2粒 番茄,切块

1颗 长叶莴苣

1颗拇指大小的姜,厚切片

1瓣 大蒜,切碎

1000毫升 鸡汤

100-150毫升 烹饪奶油

1汤匙 泰国鱼露

1汤匙 食用油

盐和白胡椒 提味

Add some clams and prawns, too!

Method

(1) Clean and cut crabs into pieces. Set aside. 

(2) Heat pot with oil over medium fire. Sauté ginger, followed by garlic until browned. Add chicken stock and bring it to a boil. 

(3) Add tomatoes and crabs. Bring soup to another boil, lower heat and simmer for about 10 minutes. 

(4) Add bee hoon, fish sauce, salt and pepper. Continue to simmer for 10 minutes. Now, stir in cooking cream. Heat off, and add in lettuce. Drizzle XO liquor. Cover pot with lid to the heat stand for about 5 minutes before serve. 

(5) Ladle and divide into bowls, or serve the whole pot to share. Happy New Year 2019! 

做法

(1)清理并将螃蟹切块。备用。

(2)中火,加油热锅。加姜,然后加入大蒜炒香。加入鸡汤,煮沸。

(3)加入番茄和螃蟹。将汤煮沸,改小火,煮约10分钟。

(4)加入粗米粉,鱼露,盐和胡椒粉。继续慢煮10分钟。现在,拌入奶油。熄火,加入生菜。淋上XO酒。盖上盖子让余温继续焖5分钟后再上桌。

(5)分成小碗,或整锅水,上桌分享。 2019年新年快乐!

Tips: Use of cooking cream yields creamier taste than evaporated milk. 

  • May add some sesame oil, if preferred.

温馨小贴士:使用烹饪奶油会比淡奶煮出更浓郁的汤汁。

*喜欢的话,可以加少许芝麻油。
