Roasting chicken for your special one on a special occasion can be as romantic as you wished.

The Recipe for Romance 浪漫之食谱

When Prince Harry and Markle got engaged over their chicken roasting night, haha.. roast chicken has instantly named “engagement chicken”, for a dream of romance.

Now that Christmas is just around the corner, let’s do this, for chicken or turkey, for Christmas party, or an engagement proposal night. May dream come true for every foodie, after having a roast chicken made with my recipe! :)



Roast chicken to go with assorted vegetables. Choose what you like.

Serves 4-5
1 large chicken (~1.2kg)
1 large wedge of pumpkin, cut into chunks with skin intact
1 zucchini, cut into chunks with skin intact
1 onion, peeled and cut
2 carrots, peeled and cut thickly
2 russet potatoes, peeled and cut into chunks
2 sweet potatoes, peeled and cut into chunks
10 cherry tomatoes

A bunch of fresh Rosemary
Few sprigs of thymes
Few cloves of garlic, peeled

Melted butter (about 2 tablespoons)

Cajun powder (1 tablespoon)
Ginger powder (1 teaspoon)
Sea salt (sparingly) x 2
Coarsely ground black pepper (sparingly) x2
Dried rosemary (Optional)

Trust me. You don’t need a special roasting tools to cook this crispy aromatic delicious roast chicken. Follow my recipe and method here. 

(1) Preheat oven on 180deg Celsius (fan). Remove chicken giblets. Trim head, bottom and feet. Rinse chicken and pat dry.

(2) Brush butter and rub the seasoning (including dried rosemary, if opted for) on the whole chicken, outside and inside. Stuff the cavity with fresh rosemary and thyme, as well as garlic cloves. Leave chicken to marinate for at least 2 hours.

(3) Place marinated chicken on roasting tray. Scatter cut vegetables around the chicken, sprinkle salt and pepper on the vegetables. Place tray on second lowest rack in the preheat oven and bake for 30min. Turn chicken over to continue baking for another 30 minutes.

(4) Slowly, transfer chicken onto the wire rack placed on top on the original tray. Increase temperature to 220deg Celsius and bake for 10 minutes. Gather the vegetables at the center of the tray so that the dripping chicken oil would fall on the vegetables for more aromas. Turn chicken over to bake further for another 10 minutes. This is to increase the crispness of the chicken skin. Serve hot.





Prepare yourself for an intake of 400-600kcal. 就预备摄入400-600卡路里的热量吧。

Tips: Open the oven door slowly during the roasting process and stand back so the heat does not hit you in the face.
